Big Eats for Little Tummies


Tonight it was just me and little cook for dinner and for many, rustling up something quick means popping a ready made meal in the microwave. For me it usually means whipping up a bowl of pasta which is a firm favourite of Little Cook. She's not particularly fussy what goes in it and generally hovers around the kitchen eating the raw ingredients before I get a chance to pop them in the pan. Tonight the parmesan shavings took a particularly large hit before the pasta was ready!

Tonight's main ingredients were fresh cherry tomatoes freshly picked from the first wave of ripe tomatoes in the greenhouse. Another courgette (will they ever stop growing?) and some mushrooms and peppers (shop bought as the peppers aren't ripe yet).




The recipe goes as follows:


  1. Finely chop an onion and crush a clove of garlic. Slowly cook in a large glug of olive oil until soft.
  2. Add some sliced or diced peppers, thick slices of courgette and cook for another 5min.
  3. Add mushrooms (I like to quarter these to keep them chunky) and halved cherry tomatoes.
  4. Add a good grinding of pepper and slowly cook until the veggies have softened and the tomatoes are starting to break down a little.
  5. Cook GF pasta of your choice, mix through the sauce and plate up.
  6. Add some parmesan shavings on top and enjoy with a nice glass of white wine!
I haven't given a list of ingredients as anything goes really! Tonight we had some bacon which I chopped up through it. Quantity-wise, just judge depending on the number of folks waiting to be served! I made far too much this evening, however this will make an ideal picnic lunch tomorrow as it is perfect served cold.

The photos prove that wee ones appreciate a good bowl of pasta as much as us big people and have no concept that it is wheat-free.
