Very Entertaining...
Faye is now six months so it was deemed time to be brave and try entertaining! A couple of friends came over, usually we go a bit OTT in the cooking but last night we kept it simple (and cheap!). A lovely lemon drizzle cake (made with mashed potato!) was thrown in the oven in the morning and left to cool. This was to be served later with the homemade ice-cream from last week.
We had four chicken fillets in the fridge and a garden full of herbs so Paul and I punted a few ideas back and forth before finding a lovely recipe on the BBC Good food website.
Mushroom stuffed chicken with lemon thyme risotto
The chicken we had was skinless so it was stuffed with the mushroom mixture then wrapped in parma ham.
The risotto was made in tandem with Faye getting her supper and we dished up just as she went to bed...perfect timing!
The freshness of the risotto was amazing. If I was to make it again I think I would butterfly and flatten out the chicken, spread over the mixture then roll it up and ballotine it (wrap the cylinder in clingfilm). I would then cook it for about 15min in boiling water. This would keep the chicken beatifully moist. I would then cut it into 'pinwheels' and lie it on the risotto.
