I feel quite confident now at adapting recipes and in general the results are pretty good but one thing has me beat...scones!
I can get the taste right but they never rise the way a good scone should. I have tried various recipes from the web, adapted a few of my own, switched flours and quantities and still the results aren't perfect.
With all this jam in the cupboard now I just have to get the recipe right. There is nothing like the taste of a warm homemade scone drizzled with jam and some cream, yum!
I refuse to give up though. The boys go back to school on Wednesday so if all goes to plan they will come home to the aroma of delicious scones rising beautifully in the oven. I could of course make traditional scones but there is an unwritten rule in our house...if I can't eat it, I don't make it!
