Victoria Sponge Squares

Wheat Free Yes
Gluten Free
Yes

Makes 20 Small squares

Ingredients
150g Softened butter
150g Caster sugar
1tsp Vanilla extract
2 eggs
150g Plain flour sifted (gluten free specialist flour)
1tsp Baking powder
3 tbsp Milk

Filling:
Jam
Whipped cream

To finish:
Dusting icing sugar

Method
1. Preheat the oven to 170oC
2. Beat together the butter, sugar and vanilla extract
3. Add the egg, flour and baking powder mixture and mix together
4. Spoon into a greased and lined oblong baking tin
5. Bake in the oven for approx 15-20min
6. Leave for a couple of minutes to cool then remove from tin and cool completely on a wire rack
7. Cut into 20 small squares
8. Slice each square across the middle and sandwich back together with jam and cream
9. Dust with icing sugar and enjoy!
