After remembering at 9pm last night I had promised to bake for a Macmillan Coffee morning today, I went to the baking cupboard and found I had a bit of a flour crisis on my hands. Lack of flour was the problem, however tucked at the back was a bag of WF/GF plain flour.
The intention was to make a Victoria sponge, however I seemed to have mislaid one of the round baking tins. So it was time to improvise again and the whole mixture got poured into an oblong baking tin, chucked in the oven and fingers crossed! It turned out a bit uneven, but maneagable. Once cool I cut it into small squares, cut each in half then sandwiched back together with some homemade raspberry jam and cream. A wee sprinking of icing sugar on top and hey presto, the boys are off to school today with a tin of yummy sponge squares. I have made it clear that anyone can eat them, not just us allergy sufferers! Recipe to follow...
