Wicked Weekend...


It's only Thursday and already I am in weekend mode...why? Well I have a very special weekend planned which involves LOTS of cooking coupled with lots of fun!

On Saturday it's officially girlie day. No partner, no kids, just a few lovely friends coming over for champagne, cocktails, dinner and massage. The latter is not supplied by me, we have an 'expert' coming for that particular treat. 

So what do you make when you don't want to be stuck in the kitchen? In this case a 'throw it in the oven' dish works wonders. I have a particular dish that comes up trumps each time. It's easy to make, can be prepared in advance and all it takes is 45min in the oven and hey presto, it's ready. It doesn't disappoint on flavour either, in fact it's one of my favourites. So what is it you may ask? Well it's the humble fish pie. Made with fresh salmon from the fishmongers (or freshly caught trout if my nephew has been fishing) and my secret ingredient of fresh boiled eggs. It may sound a bit odd but trust me, eggs in a fish pie is amazing! Coupled with a lovely crisp salad and freshly baked bread it is a winner every time.

Obviously as it's an all female party we have to end with a sweet treat and again I am going for the 'prepare in advance' option. I have been raving about Panna Cotta since I had it at River Cottage last year so I am going to impress with it again. If you want reminded of the recipe then it's here:

So that's Saturday out the way, now onto Sunday. It's my youngest son's 12th Birthday and he'll be celebrating by taking part in a Club Championship for athletics. Obviously I'll need to provide some fuel-packed food to make him run faster! Afterwards it's back to ours for a slap-up fill-up meal for friends and family. As we'll be out all day then again, I need a bung in the oven job. I am thinking Mexican, a big pot of steaming chilli in the slow cooker and enchiladas (made with corn tortillas) in the oven. Stick on some rice and we are sorted!

So happy weekend to me, bring it on...
