Herby Potatoes

Wheat Free Yes Gluten Free Yes
Makes 4 portions

Ingredients 
4-5 large potatoes (I like to use Maris Piper)
Large glug of olive oil
Mixed dried herbs (I like Italian seasoning) 
 
Method 


1. Preheat the oven to 220oC
2. Cut the potatoes into small chunks (no need to take the skin off)
3. Dry the potatoes with some kitchen roll then put into a bowl
4. Coat in olive oil and a good sprinkle of herbs
5. Place on a pre-heated baking tray then cook in the oven for 25-30min or until crispy and golden brown.
6. Enjoy!
