The BaKeri Cupcake Testing

 A lovely old schoolfriend of mine has taken the plunge with her baking passion and started her own business; The BaKeri. Do you like the name? I helped with that as her name is Keri. Very apt don't you think?

She specialises in cupcakes and after three requests for gluten-free cupcakes she asked me if I would be her taste tester; a job I took very serious!

Six beautifully presented cupcakes arrived from Falkirk and as there are six of us in the house each had one to try. The kids are used to gluten-free so they gobbled them up without a second thought!

I savoured mine a bit more to make sure I could give some decent feedback. I was happy to see Keri does her homework with toppings as it's easy to forget with these little extras that there could be gluten in them. She actually contacted Mars and received a list of their gluten-free ranges (I'll speak to her nicely and see if I can get a copy to post here).

The icing is nice, not too sweet and sickly like some icing.

Now down to the important part; the cake. Was it up to my high standards? Well the answer is yes. It was soft, not crumbly which is often the downfall with gluten free baking. It also had that slight eggy taste that I love in a cupcake. None of the cake stuck to the paper so there was no waste. My guess would be that folks wouldn't even know they were eating gluten free!
